To my knowledge, vanillin is the chemical found in vanilla that gives it its distinct flavor and smell. It can be synthesize artificially, but it can also be extracted and purified from the vanilla bean. So vanilla bean extract already has vanillin in it. So to some extent, vanillin must be legal or vanilla extract would not be so. However, I don't know what the concentration of vanillin is in the extract, and there are other unknowns about how it would act in an isolated form. I would be more worried about the other ingredients packed with vanillin than the vanillin itself.

We have never had trouble with vanilla and I would say vanillin is just fine as a constituent of vanilla extract. But avoid Vanillin in its pure form.

If a small bit of vanillin is used in vanilla extract that is far different than a concentrated form used in something else. If vanillin is used in a supplement I would need to know the ratio of the vanillin to the supplement. The only way to find out may be to write to the manufacturer of the supplement and ask questions.

The book should be required reading for anyone with Crohn's disease and we wish gastroenterologists would read it as well. The diet is a real alternative to the drug based therapy from the medical community.
